The Cebu luxury hotel segment is in for a buzz as Waterfront Cebu City Hotel and Casino introduces its new line up of executives headed by General Manager Grant Raymond Jefferies. Two others, Michele Cantini, Director of Food and Beverage and Chef Mark Mulder, Corporate Executive Chef completes the list.

I find GM Jefferies an amiable man as I was seated next to him at the dining table in Tin Gow, savoring the delectable Chinese food served. An Australian, he has a very extensive experience in the hospitality industry, having started at a young age at 6 years old at his father’s hotel. Now with over 27 years under his belt, with hands on experience spanning the Pacific, Europe, USA, South and Southeast Asia, he is sure to bring in new things to the Waterfront Cebu City.

Chef Mark Mulder, the new Corporate Execute Chef is a Dutch national with a strong two decades of culinary experience derived from free standing restaurants, cruise liners and international hotel chains. Chef Mulder is expected to be instrumental in expanding Waterfront’s kitchen development plans while introducing new cuisines.

Michele Cantini, the new Director of Food and Beverage is an Italian national with strong F&B experience in Italy and China where he has worked in big name hotel brands in various notable positions.
