Giovanni Sias is the new Executive Chef, an Italian, with over 27 years of experience in several countries. His mastery of food and his creative experimentation was showcased in the exciting buffet spread that will find its way in La Gondola, the hotel’s Italian restaurant at the Gourmet Walk.
The antipasti spread was sumptuous and varied, from cured meats to cheeses to salads and carpaccios. The pasta dishes which were prepared on the spot were remarkable. I especially loved the fresh three colored ravioli filled with cream cheese and quail’s egg that I had to get another one. The risotto was creamy and the pasta negra with its crisp sliced squid was a play of texture and taste.
The sea scallops lollipop was another memorable dish. Large scallops coated with breadcrumbs and fried to a crisp yet the inside is still tender and succulent. There were good tasting sisig croquettes and fried raviolis, tender leg of lamb, and shrimp with lemon aioli was also another that made for a delightful eating experience. Of course, all these capped with that delicious tiramisu in the form of a potted plant. And eclairs.
