I love coffee and ever since I have been drinking this one, I have always wanted to learn how brewing is done, the correct way. We used to have a brewer, the drip type that my father used way back when we were still children and I have yet to discover the joys of black coffee.

So within minutes when Yolk Cafe posted in their Instagram account about their Home Brewing Sessions, a Saturday’s only coffee event, I immediately sent a message through their Facebook page. They only limit participants to five per session and I want to be there for the first one.

Yolk Cafe’s Home Brewing Session is an attempt to educate coffee lovers on the possibilities of making your own brew at home using three different kinds of brewer: the French press, the aeropress and the V60. I’m familiar with the French press and to some extent the V60 but it was the first time I encountered the aero press.

Chef Pepin, one of the owners of the cafe handled the session and not only introduced us to the different brewers but how to use one, showed us how each brings out a different coffee profile for a specific bean. Even the addition of ice changes the taste.

After showing us how to use these, he then let us chose one single origin bean from among Yolk’s items as well as let us chose which brewer to use. After smelling the different kind of beans available at the counter, I chose Brazil Ponto Allegre with its dry cocoa, caramel, tangerine and peanut butter flavor profile with the French press.

How is the session? I think it’s a good idea and ideal for coffee lovers who would want to go beyond ordering at their favorite cafe for their coffee fix. It encourages one to explore more of their coffee obsession by seeking out the different flavor profiles that different coffee beans have. With the guidance and tips given by Chef Pepin, you not only learn the proper way of brewing but I’m sure you will enjoy and love more your cup of joe.

Of course, while waiting and after the session, I did try two of the cafe’s dishes which are captioned in the images below.

Bacon and mushroom quiche served with side salad. Actually, a bit salty for my taste, probably because of the bacon but I would have wanted the saltiness tempered. The side salad is good and refreshing.
Pumba eggs benedict which, instead of the traditional bacon or ham, uses pulled humba for the meat.
Pumba eggs benedict which, instead of the traditional bacon or ham, uses pulled humba for the meat. This is probably one of the best egg benedicts that I’ve tasted! I love the bread, with its crisp outside but soft interior. The pumba is flavorful and goes well with the local hollandaise sauce. As for the eggs, poached and done well. This is something to look forward to!

Home Brewing Sessions happens every Saturday afternoon at Yolk Cafe and is limited to five participants only for P200.
