Paella negra is simple yet flavorful

Most Filipinos don’t know this but 12 October marks Spain’s National Day and at the Waterfront Airport Hotel & Casino Mactan, this is celebrated this month with good and delicious, muy sabroso, Spanish and Spanish-Filipino cuisine happening all Fridays and Saturdays at the Uno Restaurant.

I especially love the Sopa de Ajo Español, garlicky goodness that set the stage for this sumptuous smorgasboard of Spanish cuisine. The appetizers in the form of the different jamon y croquetas and empanada de cerdo whetted my appetite more. These are especially flavorful bite sized pieces.

I did looked forward, and never got disappointed with the Rellenas de Chorizo de Pollo Asado, stuffed chicken that were neatly sliced as well as the jamon beside it. I was expecting the callos to be very good but the absence of skin and ligaments, one that I am accustomed to was a let down. But a respected food writer and columnist, Dr. Nestor Alonso II explained that the dish prepared at the buffet, mostly having pieces of tripe adheres to the traditional preparation.

Of course, with two paella dishes, no contest, I opted for the negra which was just simple and more traditional but still flavorful. There were other dishes but I saved more space for the desserts, so to speak. Canonigo, crema catalana and more desserts were laid out. Great. Sweet and delicious. But I really enjoyed much the churros, crisp outside, soft inside. The thick hot chocolate was great and so was the strawberry jam and cream dip.
